Garlicky Roasted Potatoes with Herbs Recipe

Preparation

Pre-heat oven to 475°.

Mix garlic clove and oil in a tiny soup pot over medium warmth. Prepare 2 minutes or until golden, stirring frequently. Remove garlic clove having a slotted spoon put aside. Drizzle remaining oil evenly over taters inside a large bowl, throwing well to coat. Arrange taters in one layer on the baking sheet covered with cooking spray, and sprinkle with pepper and salt. Bake at 475° for half an hour or until taters are golden. Mix reserved garlic clove, parsley, and lemon rind in a tiny bowl sprinkle garlic clove mixture evenly over taters.
