Cheesy Sweet Potato Crisps

I’ve never loved baked taters. I know… that’s hardly the best way to start a baked potato publish. Within my world (becoming an adult), they came two ways: On the dining room table – plain with only a little of margarine (sorry mother!)… and also at the Yorktown Mall food court – individuals giant sour-cream-stacked ones that appeared like cardiac arrest on the plate. (Which, incidentally, were considered the “healthy” option simply because they were baked not fried! Gotta love the area within the 90’s).

The type that wasn’t a choice? This kind… baked sweet taters full of black beans, some cheese (that is optional), toasted pumpkins seed products for crunch, along with a large dollop of creamy chile-spiced greek yogurt. Healthy comfort food at it’s finest (and simplest).

You will find no component dimensions here – make use of this as inspiration and stuff for your own heart’s desire! I'd these cute small taters that have been the right meal for any simple dinner (well, 1 for me personally, 2 for Jack)… in case your taters are bigger you might want to cut them in two. I’m presently using J.R. Watkins chili powder, and it is awesome.

  1. Pre-heat oven to 400 levels.
  2. Poke holes to your sweet taters and bake them on the baking sheet (don't wrap them in foil), for around 40-forty-five minutes or until they are fork tender.
  3. Remove in the oven. Slice them open, and scoop out a bit to create room for the stuffing. (I additionally lightly mash some the interior with the rear of my fork).
  4. Optional step: Sprinkle cheese on the top and pop them in the oven (I change to broil) for any couple of minutes for that cheese to melt.
  5. When you watch for your cheese to melt, mix together greek yogurt having a squeeze of lime, salt and a little of chile powder. Taste and adjust, which makes it as spicy/tangy as you desire.
